Well nothing quite says class like Bollinger, awarded the Royal Warrant in 1884 by Queen Victoria and again by King George VI in 1950 Queen Elizabeth II in 1955. Bollinger still hold this warrant today, so if it’s good enough for the Queen then it’s good enough for me!

If you want to really impress serve a jeroboam of Bollinger Rose NV as an aperitif.  To chill put outside in a bucket of ice, unless you have a huge fridge!

The Christmas Meal…

Turkey – Santa Carolina Reserva de Familia Chardonnay Ripe 2011, Chile.  Fruity and oaky Chardonnay to add some juiciness to the meat.

Goose – Barolo di Serralunga d’Alba DOCG 2010/2011. Fontanafredda. Italy. A hearty red that can cut through the fattiness of Goose but it’s also perfumed and fresh.

 

Rib of Beef – Lagunilla Optimus Rioja D.O.Ca 2010, Spain. Beef and a hearty Rioja, what more could you ask for.

Warm Poached Salmon – This luscious Chenin Blanc works really well with the soft, rich Salmon flakes. The FMC, Chenin Blanc 2013. South Africa.

Smoked / Gravlax Salmon – A juicy yet dry Rosado works perfectly with the zesty, tangy Salmon. Mas Amor Rosado Magnum 2014, Massard. Spain.

Nut Roast – A medium bodied wine which is velvety and packed full of cherry fruit flavours. Works well against the savouriness of the nut roast. Montepulciano d’Abruzzo, Jorio 2012. Umani Lallier Grand Cru Champagne, Β£59.99Ronchi. Italy.

Something for Dessert/After Dinner…

Taylor’s Tawny 10 Year Old Port, Portugal. Perfect with blue cheese or with Christmas Pudding.

And to just keep on partying…

If you’re having a lot of people round why not serve Lallier Grand Cru Champagne as it’s not too expensive but it’s fantastic, from a tiny producer. Serve in magnums, always looks good.
